Make snack-time colorful, fun and delicious with these healthy recipes kids will love.

Bean and Corn Salsa

Makes 8 cups

• 2 cans (15 ounces each) beans, drained and rinsed (try black, pinto, red, garbanzo, black-eyed peas, or a mixture)
• 1 3/4 cups corn (fresh, canned or thawed from frozen)
• 1 cup cilantro or parsley, finely chopped
• 5 green onions, sliced or 1/2 cup onion, finely chopped
• 3 medium tomatoes, diced
• 1 avocado, diced (optional)
• 1 Tbs canola or vegetable oil
• 2 Tbs vinegar or lime juice
• 1/2 tsp each salt and pepper

Combine beans and vegetables in a large bowl. Mix oil, vinegar or lime juice, salt and pepper together in a small bowl. Pour oil mixture over ingredients and toss lightly. Serve as a salad or a dip with toasted pita bread or baked tortilla chips.

Popeye Smoothie

Makes 4 cups

• 1 cup orange juice
• 1/2 cup pineapple juice
• 1/2 cup low-fat plain or vanilla yogurt
• 1 banana, peeled
• 2 cups fresh spinach leaves
• 1 cup crushed ice

Combine all ingredients in a blender. Puree until completely smooth. Serve immediately.

Animal Face Toast

• 1 slice sandwich bread
• Nutella, peanut butter (or other nut or seed butter), or cream cheese
• Blueberries for the eyes and nose (or nuts or chocolate chips)
• Sliced bananas, strawberries, raspberries or other fruit

Toast bread. Add necessary toppings to create your favorite animal face.
