Veggie Tortilla Roll-Ups

4 servings

Supereasy Hummus
Makes 1 ½ cups

One 15-ounce can chickpeas (garbanzo beans), drained and rinsed

1 garlic clove

2 tablespoons tahini

3 tablespoons lemon juice

1 teaspoon salt

1/3 cup olive oil

Veggie Tortilla Roll-Ups

½ cup SuperEasy Hummus

4 whole wheat tortillas

2 medium carrots, peeled and grated
(about 1 cup)

1 avocado, sliced

 

Supereasy Hummus

1. Place the chickpeas, garlic, tahini, lemon juice, and salt in a food processor and pulse to combine.

2. Add the olive oil and continue to pulse until smooth and creamy.

TIP: Tahini is a sesame seed paste that can be found at your local grocery, usually near the peanut butter or in the kosher aisle.

Veggie Tortilla Roll-Ups

1. Spread 2 tablespoons of hummus on each tortilla, taking care to cover the edges, since the hummus will act as a glue to hold the wrap together.

2. Sprinkle ¼ cup of the grated carrots along the closest edge of each tortilla, and lay ¼ of the avocado slices on top of the carrots.

3. Roll up, slice in half diagonally and serve.
